200 gms Mutton ( मटन ).
100 gms Roughly Chopped Onions ( प्याज ).
Some Dried Fenugreek Leaves ( कसूरी मेथी ).
1/2 tsp Coriander Seeds Powder ( धनिया बीज पाउडर ).
1/2 tsp Garam Masala ( गरम मसाला ).
1/4 tsp Turmeric Powder ( हल्दी पाउडर ).
Little bit Fennel Seeds ( सौंफ़ ).
2 Ports of Cardamoms ( इलाइची ).
2 Cloves ( लौंग ).
Salt ( नमक ).
1/2 tsp Garlic and Ginger Paste ( लहसुन और अदरक का पेस्ट ).
1 tsp Curd ( दही ).
1 Small Piece of Cinnamon ( दालचीनी ).
Pinch of Shah Zira ( शाह ज़ीरा ).
10-12 gms of Cashew Nuts ( काजू ).
80 gms of Ghee ( घी ).
2 tsp of Green Chili Paste ( हरी मिर्च का पेस्ट ).
Few Leaves of Mint ( पुदीना ).
Some Coriander Leaves ( धनिया पत्तियां ).
STEP 1.
First a fall heat 10 gms of Ghee, when ghee get’s hot enough then add 2 Cloves, 2 Cardamoms, pinch of Fennel Seeds, pinch of Shah Zira, 1 Stick of Cinnamon and Cashew nuts and cook this for 1-2 mins so everything can be nice Golden Brown.

STEP 2.
Now add around 100 gms of Onions in it, After cooking it for 1-2 mins on medium low heat turn the heat off and let it cool down.

Make the Gravy from it, Gravy should be neither thick nor thin so you have to add very little Water to blend it and make Gravy.

Heat 70-80 gms of Ghee in the same Kadhai, Roast the Mutton or Gosht in it for around 2 mins, in the same ghee add Garlic and Ginger Paste and cook it a little.

STEP 5.
Now add 1/2 tsp coriander seeds powder, 1/2 tsp Garam Masala, 1/4 tsp of turmeric powder, curd, 2 tsp of Green Chili Paste and cook this masala mixture for 1-2 mins.

Now add Mutton in it and cook this for atleast 10 mins at medium low heat, now add Kasuri Methi or Dried Fenugreek Leaves and Salt.
